Courgette, Mint & Feta Fritters with Lemon Yoghurt

Ingredients:
- 1 courgette, grated
- 50g feta, crumbled
- 1 egg
- 1 tbsp plain flour
- 1 tbsp chopped mint
- Olive oil for frying
- 100g Greek yoghurt
- Juice and zest of 1 lemon
- Salt and pepper
Method:
- Grate the courgette and squeeze out excess liquid.
- Mix with feta, egg, flour, mint, and seasoning.
- Heat olive oil in a frying pan and spoon in the mixture, flattening slightly. Cook for 2–3 minutes on each side until golden.
- Mix the yoghurt with lemon juice and zest.
- Serve the fritters warm with lemon yoghurt on the side.
