Duck Legs with Charred Spring Onions & Crushed New Potatoes

Ingredients:
- 2 duck legs
- 200g new potatoes
- 1 bunch spring onions
- Olive oil
- Salt and pepper
- Spice rub: 1 tsp each smoked paprika, cumin, brown sugar, salt
- A small bunch of chives, finely chopped

Method:
- Rub duck legs with spice mix. Roast at 180°C for 1 hour or until crisp.
- Boil new potatoes until tender, then crush lightly with olive oil, salt and pepper.
- Char spring onions in a hot pan or under the grill.
- Serve duck with crushed potatoes and charred onions.
