Tinned Fish Tostadas with Avocado & Chilli

Ingredients:
- 1 tin mackerel or sardines in olive oil
- 1 ripe avocado
- 1 small red chilli, finely sliced
- Juice and zest of 1 lime
- 4 small corn tortillas
- Olive oil
- Salt
- Fresh coriander (optional)
Method:
- Mash the avocado with lime juice and a pinch of salt.
- Fry tortillas in olive oil until crisp, 1–2 minutes per side.
- Top each tortilla with mashed avocado, chunks of mackerel or sardines, sliced chilli, and lime zest.
- Sprinkle with fresh coriander if using and serve immediately.
