Tuna Niçoise-style Salad with Soft Eggs & Olive Dressing

Ingredients:
- 1 tin good quality tuna
- 2 eggs
- 100g green beans
- 1 medium potato, cubed
- Handful mixed salad leaves
- 1 tbsp capers
- 6 black olives, sliced
- 1 tsp Dijon mustard
- Juice of 1 lemon
- Olive oil
- Salt and pepper
Method:
- Boil the potatoes until just tender. Add green beans for the last 2 minutes.
- Boil the eggs for 6–7 minutes, cool and peel.
- Whisk mustard, lemon juice, and olive oil to make dressing. Stir in capers and olives.
- Arrange salad leaves on a plate, top with potatoes, beans, tuna and halved eggs.
- Drizzle with dressing and serve.
