Tuna Niçoise-style Salad with Soft Eggs & Olive Dressing

Ingredients: 

• 1 tin good quality tuna 
• 2 eggs 
• 100g green beans 
• 1 medium potato, cubed 
• Handful mixed salad leaves 
• 1 tbsp capers 
• 6 black olives, sliced 
• 1 tsp Dijon mustard 
• Juice of 1 lemon 
• Olive oil 
• Salt and pepper

Method: 

1. Boil the potatoes until just tender. Add green beans for the last 2 minutes.
2. Boil the eggs for 6–7 minutes, cool and peel. 
3. Whisk mustard, lemon juice, and olive oil to make dressing. Stir in capers and olives.
4. Arrange salad leaves on a plate, top with potatoes, beans, tuna and halved eggs. 
5. Drizzle with dressing and serve.
