Flavour Profile
For good value in Champagne, it's wise to look out for small family producers like Champagne Nicolo & Paradis.
This is a lovely rich style from a Champagne house founded in 1951 by Henry Nicolo. Champagne Nicolo and Paradis still lies today in the Côte des Bar, in the south of Champagne, with vineyards on south-facing slopes, and chalk, marl and limestone soils.
Third-generation David Nicolo is at the helm today and had the foresight to take another Côte des Bar family estate, Champagne Camille Paradis, into the fold in 2013. They pride themselves on their sustainable methods in the vineyards, growing the traditional Pinot Noir, Meunier and Chardonnay, as well as a tiny patch of Pinot Blanc.
Lovingly crafted and aged three years in the cellar, this is a delightful fizz with ripe peach, citrus and brioche notes enveloped in a stream of fine creamy bubbles.
