Flavour Profile
For many wine and food lovers, Italy means Tuscany and Chianti. Yet the region’s winemakers also produce crisp, appetising white wines and none better than the dazzlingly fresh Collezione di Paolo Bianca Vergine from gifted winemaker Paolo Masi.
Paolo is the mastermind behind our bestselling Chianti, made at Fattoria di Basciano, his family’s estate high in the Tuscan hills. But white wine is actually his first love (after his wife Anna Rita), and it was his flair for whites that saw him graduate wine school top of the class.
Paolo’s pride and joy is Bianco Vergine, made with a blend of grapes from Tuscany’s Valdichiana Valley, including Italy’s native Trebbiano Toscano and Malvasia.
Some years, as little as 10% of Tuscan wines are wine and nearly all are snapped up by the locals. So this is something of a rarity. It’s all about crisp, zesty fruit, so it’s a very refreshing aperitif, but it also pairs wonderfully with grilled fish, summer salads, risotto bianco or creamy pasta dishes.
