Flavour Profile
Domaine Servin is a superb seventh-generation family cellar that is less well known than it should be. That’s despite huge praise from the wine press. The Servins can boast over 200 years of experience in Chablis. Now, added to that is the skill of François Servin’s brother-in-law, Aussie winemaker Mark Cameron.
Domaine Servin Chablis Premier Cru Vaucoupin is from prized hilltop vineyards above the Serein River. The Kimmeridgian soils give it its signature minerality, alongside fresh orchard fruits and a core of citrus.
2024 was an exceptional year for Chablis, with James Suckling writing “2024 delivered wines of striking tension, crystalline minerality and laser-sharp acidity … the best 2024s offer a vintage to cherish, even though availability is scarce”.
That’s certainly the case here. Superb balance, freshness and power with a core of citrus and characteristic Chablis steely minerality. A top choice with salmon in hollandaise sauce or spring vegetable risotto.
