Flavour Profile
Domaine Servin is a superb, long-standing family cellar that’s remarkably less well known than it should be. That’s despite huge praise from the wine press. The Servins can boast over 200 years of experience in Chablis. Now, added to that is the skill of François Servin’s brother-in-law, Aussie winemaker Mark Cameron.
Domaine Servín Chablis Premier Cru Montée de Tonnerre is from a southwest site, only separated from Grand Cru Les Blanchots by a narrow ravine. It produces grapes of wonderful aromatic intensity and purity. 2024 is a vintage for purists – for those of you who love the mineral classicism and racy freshness of top Chablis.
Mark teased out the richness of the fruit, carefully fermenting the wine, with long ageing on lees for added weight and texture.
