The Ulithorne winery was founded in 1950, when Bob Whiting planted 30 acres of vines in McLaren Vale’s now-famous sub-region of Blewitt Springs. Over the decades, it has cemented its reputation as an iconic Australian producer, renowned for its “small-batch, high-quality wines” (Halliday Wine Companion).
Ulithorne Singularis is made from grapes grown on the estate’s original vineyard, now more than 70 years old and yielding fruit with exceptional concentration of flavour. Matured for 18 months in French oak, the wine is big, rich and chocolatey, with lavish toasty oak notes and impressive depth.
Decant for an hour to allow the wine to fully open. An ideal match for slow-braised beef, roasted lamb shoulder, or dark chocolate desserts with low sweetness.
